Ellie is a true country girl at heart, happiest when she’s outdoors exploring the countryside, heading off on a long walk, or squeezing in a Pilates class before the day begins. When she’s not lost in a good book, she’s usually planning her next adventure — having already travelled the length of New Zealand in a camper van and volunteered in both Bolivia and Peru.
